Bologna is known in Italy and all over the world for its excellences such as its university and its engines, but undoubtedly, what makes it most famous is its gastronomy.

So much so that the "Bolognese sauce" (which in Bologna they call ragรน) can be easily found in supermarkets in Singapore or Buenos Aires.

Bologna's culinary tradition is ancient and deeply rooted, extending beyond the city to encompass the entire Emilia-Romagna region.

They are the smallest stuffed pasta in existence.
They are shaped like a triangle with a ring at the base and, according to tradition, must be closed by rolling them around the little finger.

๐Ÿ”ธ Dough: ** Fresh egg-based pasta, different from supermarket dry pasta.

The balanzoni, instead, are a special version of tortelloni.

This gives it a lighter and more delicate flavor, compared to the classic egg pasta version.

Probably the simplest but the most representative dish of Bolognese gastronomy.
The tagliatella is a fresh egg-based pasta with very specific characteristics:

โœ” Thickness: It should be felt when chewed, without being too thin or transparent.
โœ” Roughness: This is key to holding the sauce well, and depends on the kneading method.
